A quick and healthy recipe for air-fried zucchini and squash that’s crispy on the outside and tender on the inside.

- 2 medium zucchinis, sliced into rounds
- 2 medium yellow squashes, sliced into rounds
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- Parmesan cheese for garnish (optional)
Instructions
- Preheat the air fryer to 400°F (200°C).
- In a large bowl, combine sliced zucchini and squash.
- Drizzle olive oil over the vegetables and sprinkle with garlic powder, onion powder, Italian seasoning, salt, and pepper.
- Toss well to coat all the pieces evenly.
- Place the seasoned zucchini and squash in the air fryer basket in a single layer.
- Cook for 10 minutes, shaking the basket halfway through to ensure even cooking.
- Once done, check for tenderness and adjust cooking time if necessary.
- Remove from the air fryer and optionally sprinkle with Parmesan cheese before serving.
