Description

A quick and healthy recipe for air-fried zucchini and squash that’s crispy on the outside and tender on the inside.


Ingredients

  • 2 medium zucchinis, sliced into rounds
  • 2 medium yellow squashes, sliced into rounds
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Parmesan cheese for garnish (optional)

Instructions

  1. Preheat the air fryer to 400°F (200°C).
  2. In a large bowl, combine sliced zucchini and squash.
  3. Drizzle olive oil over the vegetables and sprinkle with garlic powder, onion powder, Italian seasoning, salt, and pepper.
  4. Toss well to coat all the pieces evenly.
  5. Place the seasoned zucchini and squash in the air fryer basket in a single layer.
  6. Cook for 10 minutes, shaking the basket halfway through to ensure even cooking.
  7. Once done, check for tenderness and adjust cooking time if necessary.
  8. Remove from the air fryer and optionally sprinkle with Parmesan cheese before serving.
