Deliciously roasted vegetables made easily in the air fryer, perfect as a side dish or healthy snack.
Ingredients

- 2 cups broccoli florets
- 2 cups cauliflower florets
- 2 cups bell peppers, chopped
- 1 cup carrots, sliced
- 3 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon dried oregano
- Salt and pepper to taste
Instructions
- Preheat your air fryer to 400°F (200°C).
- In a large bowl, combine the broccoli, cauliflower, bell peppers, and carrots.
- Drizzle the olive oil over the vegetables and sprinkle with garlic powder, onion powder, oregano, salt, and pepper. Toss to coat evenly.
- Place the vegetables in the air fryer basket in a single layer. You may need to do this in batches depending on the size of your air fryer.
- Cook for 15-20 minutes, shaking the basket halfway through, until the vegetables are tender and slightly charred.
- Remove from the air fryer and serve warm.
Notes
- Feel free to mix and match your favorite vegetables.
- For extra flavor, you can add a squeeze of lemon juice or sprinkle with parmesan cheese before serving.
