Ingredients

  • 2 cups cauliflower florets
  • 2 cups bell peppers, chopped
  • 1 cup carrots, sliced
  • 3 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Instructions

  1. Preheat your air fryer to 400°F (200°C).
  2. In a large bowl, combine the broccoli, cauliflower, bell peppers, and carrots.
  3. Drizzle the olive oil over the vegetables and sprinkle with garlic powder, onion powder, oregano, salt, and pepper. Toss to coat evenly.
  4. Place the vegetables in the air fryer basket in a single layer. You may need to do this in batches depending on the size of your air fryer.
  5. Cook for 15-20 minutes, shaking the basket halfway through, until the vegetables are tender and slightly charred.
  6. Remove from the air fryer and serve warm.
