- 2 medium zucchinis, sliced into 1/4-inch rounds
- 2 medium yellow squash, sliced into 1/4-inch rounds
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- Parmesan cheese for topping (optional)
Instructions
- Preheat the air fryer to 375°F (190°C).
- In a large bowl, toss the sliced zucchini and squash with olive oil, garlic powder, Italian seasoning, salt, and pepper until evenly coated.
- Place the seasoned squash and zucchini in the air fryer basket in a single layer. You may need to do this in batches depending on the size of your air fryer.
- Air fry for 10-12 minutes, shaking the basket halfway through cooking, until the vegetables are tender and lightly browned.
- If using, sprinkle with Parmesan cheese immediately after removing from the air fryer.
