Deliciously crispy and tender squash and zucchini cooked to perfection in an air fryer.


Ingredients

  • 2 medium zucchinis, sliced into rounds
  • 2 medium yellow squashes, sliced into rounds
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon Italian seasoning

Instructions

  1. Preheat the air fryer to 400°F (200°C).
  2. In a large bowl, combine the sliced zucchini and squash.
  3. Drizzle olive oil over the vegetables and sprinkle with garlic powder, onion powder, salt, black pepper, and Italian seasoning.
  4. Toss the vegetables until evenly coated.
  5. Place the coated squash and zucchini in the air fryer basket in a single layer. You may need to do this in batches depending on the size of your air fryer.
  6. Air fry for 10-12 minutes, shaking the basket halfway through, until the vegetables are golden and tender.
  7. Serve warm as a side dish or enjoy as a healthy snack.

Notes

  • Feel free to add other seasonings according to your taste.
  • For a cheesy flavor, sprinkle some grated Parmesan cheese over the vegetables before serving.
