Deliciously crispy and tender squash and zucchini cooked to perfection in an air fryer.
Ingredients

- 2 medium zucchinis, sliced into rounds
- 2 medium yellow squashes, sliced into rounds
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon Italian seasoning
Instructions
- Preheat the air fryer to 400°F (200°C).
- In a large bowl, combine the sliced zucchini and squash.
- Drizzle olive oil over the vegetables and sprinkle with garlic powder, onion powder, salt, black pepper, and Italian seasoning.
- Toss the vegetables until evenly coated.
- Place the coated squash and zucchini in the air fryer basket in a single layer. You may need to do this in batches depending on the size of your air fryer.
- Air fry for 10-12 minutes, shaking the basket halfway through, until the vegetables are golden and tender.
- Serve warm as a side dish or enjoy as a healthy snack.
Notes
- Feel free to add other seasonings according to your taste.
- For a cheesy flavor, sprinkle some grated Parmesan cheese over the vegetables before serving.
