- 4 boneless, skinless chicken breasts
- 1 cup grated Parmesan cheese
- 1 cup panko breadcrumbs
- 1 teaspoon garlic powder
- 1 teaspoon Italian seasoning
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 2 large eggs
- 1 tablespoon olive oil
Instructions
- Preheat the air fryer to 400°F (200°C).
- In a shallow bowl, combine the grated Parmesan, panko breadcrumbs, garlic powder, Italian seasoning, salt, and pepper.
- In another bowl, whisk the eggs until well beaten.
- Dip each chicken breast into the egg mixture, allowing any excess to drip off.
- Then coat the chicken in the Parmesan breadcrumb mixture, pressing to adhere.
- Lightly spray the air fryer basket with cooking spray.
- Place the coated chicken breasts in a single layer in the air fryer basket. If necessary, cook in batches.
- Spray the tops of the chicken with olive oil to help them crisp up.
- Air fry for 12-15 minutes, flipping halfway through, until the chicken reaches an internal temperature of 165°F (74°C) and is golden brown.
- Let the chicken rest for a few minutes before serving.
Notes
- For extra flavor, marinate the chicken in Italian dressing for a couple of hours before coating.
- Feel free to add herbs or spices to the breadcrumb mixture for a personalized twist.
- Serve with a side of veggies or a fresh salad for a complete meal.
