  • 1 cup grated Parmesan cheese
  • 1 cup panko breadcrumbs
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 large eggs
  • 1 tablespoon olive oil

Instructions

  1. Preheat the air fryer to 400°F (200°C).
  2. In a shallow bowl, combine the grated Parmesan, panko breadcrumbs, garlic powder, Italian seasoning, salt, and pepper.
  3. In another bowl, whisk the eggs until well beaten.
  4. Dip each chicken breast into the egg mixture, allowing any excess to drip off.
  5. Then coat the chicken in the Parmesan breadcrumb mixture, pressing to adhere.
  6. Lightly spray the air fryer basket with cooking spray.
  7. Place the coated chicken breasts in a single layer in the air fryer basket. If necessary, cook in batches.
  8. Spray the tops of the chicken with olive oil to help them crisp up.
  9. Air fry for 12-15 minutes, flipping halfway through, until the chicken reaches an internal temperature of 165°F (74°C) and is golden brown.
  10. Let the chicken rest for a few minutes before serving.
