Ingredients

  • 2 large eggs

  • 1 cup blueberries (or chocolate chips, nuts, etc.)

Instructions

  1. In a large mixing bowl, combine flour, sugar, baking powder, and salt.
  2. In another bowl, whisk together melted butter, milk, eggs, and vanilla extract.
  3. Pour the wet ingredients into the dry ingredients and mix until just combined. Do not overmix.
  4. Fold in the blueberries or your choice of add-ins.
  5. Preheat the air fryer to 320°F (160°C).
  6. Line muffin cups with paper liners or spray with non-stick cooking spray.
  7. Spoon the batter into the muffin cups, filling each about 2/3 full.
  8. Arrange the muffin cups in the air fryer basket in a single layer.
  9. Cook in the air fryer for 12-15 minutes or until a toothpick inserted into the center comes out clean.
