- 1 lb shrimp, peeled and deveined
- 3 medium potatoes, diced
- 4 cloves garlic, minced
- 2 tbsp olive oil
- 1 lemon, juiced and zested
- 1 tsp paprika
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 tbsp fresh parsley, chopped
Instructions
- Preheat the air fryer to 400°F (200°C).
- Toss the diced potatoes with 1 tbsp olive oil, half the garlic, lemon zest, salt, and paprika.
- Place potatoes in the air fryer basket and cook for 15 minutes, shaking halfway.
- In a bowl, mix shrimp with remaining olive oil, garlic, lemon juice, and black pepper.
- Add shrimp to the air fryer with potatoes and cook for 5-7 minutes until shrimp are pink.
- Sprinkle with fresh parsley before serving.
