- 1 cup dried chickpeas
- 1 small onion, chopped
- 2 cloves garlic, minced

- 1/4 teaspoon black pepper

Instructions
- Soak the dried chickpeas overnight in water.
- Drain and rinse the soaked chickpeas.
- In a food processor, combine the chickpeas, onion, garlic, parsley, cilantro, cumin, coriander, salt, black pepper, and cayenne pepper (if using).
- Pulse the ingredients until just combined, being careful not to overprocess.
- Transfer the mixture to a bowl and stir in the flour.
- Refrigerate the falafel mixture for at least 30 minutes to help it hold its shape.
- Preheat the air fryer to 375°F (190°C).
- Form the falafel mixture into small balls or patties.
- Lightly spray the falafel with cooking spray before placing them in the air fryer basket.
- Cook the falafel in batches, ensuring not to overcrowd the air fryer.
- Air fry for about 12-15 minutes, flipping halfway through, until golden brown and crispy.
- Serve warm with your choice of dipping sauce or in wraps.
