- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 1 cup panko breadcrumbs
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 teaspoon Italian seasoning
- Cooking spray
Instructions
- Preheat the air fryer to 375°F (190°C).
- Slice the eggplants into 1/2-inch thick rounds.
- Sprinkle salt over the eggplant slices and let them sit for about 30 minutes to draw out moisture and bitterness.
- Rinse the salted eggplant slices under cold water and pat them dry with paper towels.
- In a shallow dish, combine panko breadcrumbs, black pepper, and Italian seasoning.
- Dip each eggplant slice into the breadcrumb mixture, ensuring they are well-coated.
- Spray the air fryer basket with cooking spray to prevent sticking.
- Arrange the breaded eggplant slices in a single layer in the air fryer basket.
- Air fry the eggplant slices for about 10 minutes, flipping halfway through, until golden brown and crispy.
- Remove the eggplant slices from the air fryer and layer them in a baking dish with marinara sauce and mozzarella cheese.
- Repeat the layering process until all ingredients are used, finishing with a layer of marinara sauce and a sprinkle of Parmesan cheese on top.
- Return the assembled dish to the air fryer and cook for an additional 10 minutes until the cheese is melted and bubbly.
