- 1 pound large shrimp, peeled and deveined
- 1 cup shredded coconut
- 1/2 cup breadcrumbs
- 1/2 cup all-purpose flour
- 2 large eggs, beaten
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- Salt and pepper to taste
- Cooking spray
Instructions
- Preheat your air fryer to 400°F (200°C).
- In a bowl, combine the shredded coconut, breadcrumbs, garlic powder, paprika, salt, and pepper.
- Set up a dredging station with three bowls: one with flour, one with beaten eggs, and one with the coconut mixture.
- Dip each shrimp first into the flour, shaking off any excess, then into the beaten eggs, and finally into the coconut mixture, pressing gently to adhere.
- Spray the air fryer basket with cooking spray to prevent sticking.
- Place the coated shrimp in a single layer in the air fryer basket, making sure they are not touching.
- Spray the tops of the shrimp lightly with cooking spray.
- Cook in the air fryer for 8-10 minutes, flipping halfway through, until golden brown and crispy.
- Remove from the air fryer and serve immediately with your favorite dipping sauce.
Notes
- For extra flavor, marinate the shrimp in a mixture of lime juice, garlic, and spices for 15-30 minutes before coating.
- Adjust the cooking time based on the size of the shrimp.
- Serve with sweet chili sauce or a tangy dipping sauce for added flavor.
