- 1 pound boneless, skinless chicken breasts, cut into 1-inch pieces
- 1 red bell pepper, cut into 1-inch pieces
- 1 green bell pepper, cut into 1-inch pieces
- 1 small red onion, cut into 1-inch pieces
- 3 tablespoons olive oil
- 2 tablespoons soy sauce
- 1 tablespoon lemon juice
- 2 cloves garlic, minced
- 1 teaspoon paprika
- 1 teaspoon dried oregano
- Salt and pepper to taste
- Skewers (if using wooden, soak in water for 30 minutes prior)
Instructions
- In a large bowl, combine olive oil, soy sauce, lemon juice, minced garlic, paprika, oregano, salt, and pepper. Mix well.
- Add chicken pieces to the marinade, making sure they are well coated. Let marinate for at least 30 minutes, or up to 2 hours in the refrigerator.
- Preheat the air fryer to 400°F (200°C).
- Thread the marinated chicken pieces, bell peppers, and red onion onto the skewers, alternating between each ingredient.
- Place the skewers in the air fryer basket in a single layer, ensuring they do not overlap.
- Cook for 10-12 minutes, flipping halfway through, until the chicken is cooked through and has nice grill marks.
- Once done, remove from the air fryer and let rest for a few minutes before serving.
Notes
- Feel free to substitute vegetables based on your preference, such as zucchini or cherry tomatoes.
- For extra flavor, add your favorite herbs or spices to the marinade.
- Ensure chicken is cooked to an internal temperature of 165°F (75°C) for safe consumption.
