- 4 boneless, skinless chicken breasts
- 2 cups mixed vegetables (bell peppers, zucchini, broccoli, etc.)
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon paprika
- Salt and pepper to taste
- 1 teaspoon Italian seasoning (optional)
Instructions
- Preheat the air fryer to 400°F (200°C).
- In a large bowl, combine the chicken breasts, olive oil, garlic powder, onion powder, paprika, salt, pepper, and Italian seasoning. Toss until the chicken is evenly coated.
- Add the mixed vegetables to the bowl and toss to combine.
- Place the chicken breasts in the air fryer basket in a single layer. Add the vegetables around the chicken.
- Cook for 15-20 minutes, shaking the basket halfway through, until the chicken is cooked through (internal temperature of 165°F/74°C) and the vegetables are tender.
- Remove from the air fryer and let rest for a few minutes before slicing and serving.
