Ingredients

  • 4 large eggs
  • 1/4 cup milk
  • 1/2 cup shredded cheese (cheddar or your favorite)
  • 1/2 cup cooked and crumbled sausage or bacon (optional)
  • 1/4 cup diced bell peppers
  • 1/4 cup diced onions
  • 4 large flour tortillas
  • Salt and pepper to taste
  • Cooking spray

Instructions

  1. In a bowl, whisk together eggs, milk, salt, and pepper.
  2. In a skillet over medium heat, scramble the egg mixture until fully cooked. Stir in cheese, sausage, bell peppers, and onions.
  3. Lay out each tortilla and add an equal portion of the egg mixture to the center of each.
  4. Fold in the sides of the tortilla, then roll it up tightly from the bottom.
  5. Preheat your air fryer to 350°F (175°C) and lightly spray the basket with cooking spray.
  6. Place the burritos seam-side down in the air fryer basket. Spray the tops lightly with cooking spray.
  7. Cook for 8-10 minutes or until the burritos are golden brown and crispy.
  8. Remove from the air fryer and let cool for a minute before serving.
