- 4 large eggs
- 1/4 cup milk
- 1/2 cup shredded cheese (cheddar or your choice)
- 1/2 cup cooked sausage or bacon, crumbled
- 1/4 cup diced bell peppers
- 1/4 cup diced onions
- 4 large flour tortillas
- Salt and pepper to taste
- Cooking spray
Instructions
- In a bowl, whisk together the eggs, milk, salt, and pepper until well combined.
- Heat a non-stick skillet over medium heat. Add the bell peppers and onions, and sauté until softened, about 3-4 minutes.
- Pour the egg mixture into the skillet, and cook, stirring gently, until the eggs are scrambled and cooked through.
- Remove from heat and stir in the shredded cheese and cooked sausage or bacon.
- Lay out the flour tortillas on a clean surface. Divide the egg mixture evenly among the tortillas.
- Fold in the sides of the tortillas and roll them up tightly to form burritos.
- Preheat the air fryer to 350°F (175°C). Lightly spray the air fryer basket with cooking spray.
- Place the burritos seam-side down in the air fryer basket, making sure they are not overcrowded.
- Air fry for 8-10 minutes, turning halfway through, until the burritos are golden brown and crispy.
