Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion and garlic; sauté until soft.
  3. Add carrots and celery; cook for 5 minutes.
  4. Stir in zucchini and cook for another 3 minutes.
  5. Pour in vegetable broth and diced tomatoes.
  6. Add thyme, salt, and pepper; bring to a boil.
  7. Reduce heat and simmer for 20 minutes.
  8. Stir in spinach and cook for 5 more minutes.
  9. Serve hot.
