- 2 medium potatoes, thinly sliced
- 2 ears corn, grilled or boiled
- 1/4 cup mayonnaise

- 1 tsp chili powder

- 1 tbsp olive oil
- 1 lime, juiced
- Salt and pepper to taste

Instructions
- Preheat oven to 425°F. Toss potato slices with olive oil, salt, and pepper. Bake for 20 minutes until crispy.
- Season chicken with chili powder, smoked paprika, salt, and pepper. Cook in a skillet over medium heat for 6-8 minutes until done.
- Cut corn kernels from cob. Mix with mayonnaise, cotija cheese, and lime juice.
