  • 2 cups cooked quinoa or rice
  • 1 cucumber, diced
  • 1 cup cherry tomatoes, halved
  • 1/2 red onion, thinly sliced
  • 1/4 cup fresh parsley, chopped
  • 1/2 cup Greek yogurt
  • 2 cloves garlic, minced
  • 1 tbsp lemon juice
  • 1 tsp dried oregano
  • 1/2 tsp cumin
  • 1/2 tsp paprika
  • Salt and pepper to taste
  • Pita bread or flatbread (optional)

Instructions

  1. Heat a skillet over medium-high heat. Add ground lamb and cook until browned, breaking it up as it cooks.
  2. Season lamb with oregano, cumin, paprika, salt, and pepper. Stir well and cook for 5-6 minutes.
  3. In a small bowl, mix Greek yogurt, minced garlic, lemon juice, and a pinch of salt to make the creamy sauce.
  4. Divide cooked quinoa or rice among bowls. Top with cooked lamb, cucumber, tomatoes, red onion, and parsley.
  5. Drizzle the creamy sauce over each bowl. Serve with pita bread if desired.
