A quick and nutritious quinoa bowl packed with seasonal vegetables and topped with a creamy tahini dressing.
Ingredients

- 1 cup quinoa
- 2 cups water or vegetable broth
- 1 tbsp olive oil
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1 avocado, sliced
- 1 cup roasted sweet potatoes, cubed
- 1/4 cup red onion, thinly sliced
- 1/4 cup fresh parsley, chopped
- Salt and pepper to taste
- For the tahini dressing:
- 2 tbsp tahini
- 1 tbsp lemon juice
- 1 tbsp maple syrup
- 1 clove garlic, minced
- 2–3 tbsp water
- Salt to taste
Instructions
- Rinse quinoa under cold water.
- Cook quinoa in water or vegetable broth according to package instructions.
- While quinoa cooks, prepare vegetables and roast sweet potatoes.
- Whisk tahini dressing ingredients together until smooth.
- Assemble bowls with quinoa, vegetables, and drizzle with tahini dressing.
- Serve immediately.

- Use pre-cooked quinoa for quicker assembly.
