Ingredients

  • 1 cup quinoa
  • 2 cups water or vegetable broth
  • 1 tbsp olive oil
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1 avocado, sliced
  • 1 cup roasted sweet potatoes, cubed
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup fresh parsley, chopped
  • Salt and pepper to taste
  • For the tahini dressing:
    • 2 tbsp tahini
    • 1 tbsp lemon juice
    • 1 tbsp maple syrup
    • 1 clove garlic, minced
    • 23 tbsp water
    • Salt to taste

Instructions

  1. Rinse quinoa under cold water.
  2. Cook quinoa in water or vegetable broth according to package instructions.
  3. While quinoa cooks, prepare vegetables and roast sweet potatoes.
  4. Whisk tahini dressing ingredients together until smooth.
  5. Assemble bowls with quinoa, vegetables, and drizzle with tahini dressing.
  6. Serve immediately.
