Ingredients

  • 1 lb (450g) boneless, skinless chicken breasts, sliced
  • 2 cups mushrooms, sliced
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1 tbsp olive oil
  • 1 tsp dried thyme
  • Salt and pepper, to taste
  • 2 cups cooked rice

Instructions

  1. Heat olive oil in a large skillet over medium-high heat.
  2. Add chicken slices and cook for 5-6 minutes until browned. Remove and set aside.
  3. In the same skillet, sauté onions and garlic for 2 minutes.
  4. Add mushrooms and cook until softened, about 4 minutes.
  5. Pour in chicken broth and scrape any browned bits from the pan.
  6. Stir in heavy cream and thyme. Simmer for 3-4 minutes.
  7. Return chicken to the skillet and cook for another 2-3 minutes until heated through. Season with salt and pepper.
  8. Serve warm over cooked rice.
