- 8 oz penne pasta
- 1 lb boneless chicken breast, sliced
- 1 tbsp Cajun seasoning
- 1 cup corn kernels (fresh or frozen)
- 2 cloves garlic, minced
- 1 cup heavy cream
- 1/2 cup grated parmesan cheese
- 2 tbsp olive oil
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Cook pasta according to package directions, drain, and set aside.
- Heat olive oil in a pan over medium heat. Add chicken and Cajun seasoning, cook until browned (5-6 minutes).
- Add garlic and corn, sauté for 2 minutes.
- Pour in heavy cream, simmer for 3 minutes.
- Stir in parmesan cheese until melted.
- Add cooked pasta, toss to coat evenly.
- Season with salt and pepper, garnish with parsley.
Notes
- Adjust Cajun seasoning for more or less heat.
- Substitute half-and-half for a lighter sauce.
