- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 1 yellow onion, sliced
- 2 tbsp olive oil
- 1 tbsp fajita seasoning
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 cup cooked rice
- 1/4 cup shredded cheese
- 2 tbsp sour cream
- 1 tbsp chopped cilantro
- 1 lime, cut into wedges
Instructions
- Heat olive oil in a large skillet over medium-high heat.
- Add chicken strips and cook for 5-6 minutes until browned.
- Add bell peppers, onion, fajita seasoning, salt, and black pepper. Cook for 5-7 minutes until vegetables soften.
- Divide cooked rice between two bowls.
- Top with chicken and vegetable mixture.
- Garnish with cheese, sour cream, cilantro, and a lime wedge.
- Serve immediately.
