Ingredients

- 1 whole chicken (3–4 pounds)
- 2 tablespoons olive oil
- 1 tablespoon salt
- 1 teaspoon black pepper
- 1 lemon, halved
- 4 sprigs fresh rosemary
- 4 cloves garlic, minced
Instructions
- Preheat your oven to 375°F (190°C).
- Pat the chicken dry with paper towels.
- Rub the olive oil all over the chicken.
- Season the chicken with salt and pepper inside and out.
- Stuff the cavity with lemon halves, rosemary, and garlic.
- Place the chicken in a roasting pan.
- Roast for 1 hour and 20 minutes or until the internal temperature reaches 165°F (75°C).
- Let the chicken rest for 10 minutes before carving.
Notes
- For extra flavor, marinate the chicken overnight.
- Serve with roasted vegetables for a complete meal.
