- 2 lbs of beef roast
- 4 carrots, chopped
- 3 potatoes, diced
- 1 onion, sliced
- 4 cloves of garlic, minced
- 2 cups beef broth
- 1 tablespoon olive oil
- Salt and pepper to taste
Instructions
- Preheat the oven to 350°F.
- Heat olive oil in a large pot over medium heat.
- Season the beef roast with salt and pepper.
- Sear the roast on all sides until browned.
- Add onions and garlic to the pot and sauté until softened.
- Place the roast back in the pot and add broth, carrots, and potatoes.
- Cover and cook in the oven for 3 hours.
- Remove from oven and let rest for 10 minutes before slicing.
