Ingredients

- 2 celery stalks, diced
- 3 garlic cloves, minced
- 1 zucchini, diced
- 1 bell pepper, diced
- 4 cups vegetable broth
- 1 can diced tomatoes
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat.
- Add onion, carrots, and celery. Cook until softened.
- Stir in garlic, zucchini, and bell pepper. Cook for 5 minutes.
- Pour in vegetable broth and diced tomatoes.
- Add oregano and basil. Season with salt and pepper.
- Bring to a boil, then reduce heat and simmer for 20 minutes.
- Serve hot and enjoy.
