- 1 avocado, diced
- 1 lime, juiced

Instructions
- Rinse quinoa under cold water.
- Cook quinoa according to package instructions.
- In a large bowl, combine cooked quinoa, black beans, corn, and diced bell pepper.
- Add lime juice, salt, and pepper. Mix well.
- Top with diced avocado before serving.
