Ingredients

- 2 chicken breasts
- 1 cup broccoli florets
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- Salt and pepper to taste
- 1/2 cup quinoa
- 1 1/2 cups water
Instructions
- Rinse the quinoa under cold water.
- In a pot, combine quinoa and water. Bring to a boil.
- Reduce heat and simmer for 15 minutes or until water is absorbed.
- While quinoa cooks, heat olive oil in a pan over medium heat.
- Add chicken breasts, garlic powder, salt, and pepper. Cook for 6-7 minutes on each side until cooked through.
- Add broccoli to the pan. Cook for an additional 5 minutes until tender.
- Serve chicken and broccoli over quinoa.
Notes
- Feel free to substitute chicken with tofu for a vegetarian option.
- You can add other vegetables like bell peppers or carrots.
- Leftovers can be stored in the fridge for up to 3 days.
