Quick and simple meals for the Daniel Fast.
Ingredients

- 1 cup quinoa
- 2 cups vegetable broth
- 1 can black beans, rinsed
- 1 cup corn
- 1 red bell pepper, diced
- 1 avocado, diced
- 1 lime, juiced
- Salt to taste
- Pepper to taste
Instructions
- Rinse quinoa under cold water.
- In a pot, combine quinoa and vegetable broth.
- Bring to a boil, then reduce heat and cover.
- Simmer for 15 minutes or until liquid is absorbed.
- Fluff quinoa with a fork.
- In a bowl, mix black beans, corn, red bell pepper, and avocado.
- Add quinoa to the bowl.
- Drizzle with lime juice and season with salt and pepper.
- Toss gently to combine.
Notes
- Serve warm or cold.
- Store leftovers in the refrigerator.
